Lamb Burgers with Cheats Mint Mayo

These Lamb Burgers with Cheats Mint Mayo are so full of flavour. They are so simple to make and so delicious to eat. I always make double the amount and freeze them. These can cook straight from frozen! Take your summer barbecue to the next level with these Lamb Burgers.

Now lamb is not the most popular meat worldwide, in fact Pork tops that list. This may be because it does have a stronger flavour than pork or chicken and so may be more divisive. The flavour of lamb is accented by garlic, rosemary and thyme in these glorious burgers. It is then crowned with cool mint mayo and taken to dizzying heights.

These Lamb Burgers with Cheats Mint Mayo are at their best hot off the barbecue on a hot sunny day with a cold drink and cool potato salad. They take 8-10 minutes to cook from freshly made and if cooking from frozen then 12-16 minutes just turn them every 2 minutes or so. When storing them in the freezer either wrap individually or place them between pieces of parchment to stop them sticking together.

Now the when making your own burgers the arguments are always the same. Should I add breadcrumbs? Do I need an Egg? Do I season before mixing? Now in short my answer is no to all. You don’t need breadcrumbs or egg to help bind the mixture. When it comes to seasoning I prefer to season with once I have the patty shape as you would a steak.The one thing i will say is that the quicker you work the garlic and herbs into the meat the better. The more you handle it the tougher it will become.

The mint mayo is quite frankly embarrassingly easy all you need is shop bought mayonnaise and shop bought mint sauce. Of course you can use homemade version of both of these. If I find I have time before an occasion then I may be tempted to make my own mayo but truly no one has the time to make it all the time.The ration is 5:1 so if you are serving 4-6 then 5tbsp mayo to 1tbsp mint sauce works well. Although if you would like more mint, then add more. Keep tasting as you mix to and your ideal ratio.

Lamb Burgers with Cheats Mint Mayo

Full of flavour these are my secret weapon at a summer barbecue

500 grams Lamb Mince
2 cloves Garlic
2 tsp Rosemary Leaves
1 tsp Thyme Leaves
Season with Salt & Pepper

Cheats Mint Mayo

5 tbsp Mayonnaise
1 tbsp Mint Sauce

Prep the Patties
Preheat a griddle pan, grill or barbecue
Finely chop the Rosemary & Thyme and finely grate the Garlic cloves.
Mix with the Lamb mince, work quickly to avoid the meat getting tough.
Divide into 4 equal portions and flatten into patties.
Season the outside with Salt & Pepper.
Cook the Burgers
Place the burgers in your preheated griddle pan or on the barbecue or under the grill and cook for 8-10 minutes turning every couple of minutes.
During this time make your Mint Mayo, simply mix together the Mayomnnaise and Mint Sauce set aside.
Serving Time
Serve the burgers in a toasted bun, (you can toast them in the griddle pan if you need to now) with lettuce, sliced tomato and crowned with Mint Mayo.

Leftovers Tip

If you have made too many patties you can freeze them uncooked and then cook from frozen simply increase the cooking time to 12-16 minutes.
If the burgers leftover are cooked crumble up and heat in a frying pan then add to green salad leaves with feta, green grapes, crispy croutons and dollops of mint mayo.
