Vegan Meringue Pops

Ingredients
  

  • 100 g Aquafaba
  • 0.5 tsp Cream of Tartar
  • 150 g Caster Sugar
  • Lollipop Sticks
  • Sprinkles to decorate

Instructions
 

  • Preheat the oven to 100°C or 90°C Fan and line two baking sheets with baking parchment.
    Add the Aquafaba & Cream of Tartar to a large bowl or the bowl of a stand mixer. Then whisk until you have soft peaks. If you tip the bowl the mix shouldn't slip down the bowl - if it moves keep on whisking. this will take somewhere around 7-10 minutes.
    You want to use an electric for this as Aquafaba takes longer to whip up.
  • Whilst you are still whisking add in the sugar 1 spoon at a time - too much and the aquafaba will deflate. Allow the sugar to be incorporated between each spoonful.
    Once all incorporated it will be stiff and glossy. Add to a piping bag and prepare to pipe.
  • Pipe a dot then place a lollipop stick onto it. Then pipe a rosette over the top of the stick starting from the centre and working out.
    Then decorate with sprinkles if using and bake until crisp and firm - this will take between 2 and 3 hours.
    After this turn the oven off and leave them in there for 2 hours then remove and enjoy.
    Store them in an airtight container.

Leftovers Tip

Of course the only answer here is an Eton mess however crumbled over ice cream or even over a stack of pancakes is just as fabulous.
