Sweet Potato & Bacon Waffles

Ingredients
  

  • 2 Sweet Potatoes 250g Mashed
  • 4 Rashers Bacon
  • 85 grams Plain Flour
  • 1 tsp Baking Powder
  • 125 ml Oat Milk (1 half cup measure)
  • 3 Eggs

Instructions
 

  • Get Prepped
    Preheat the oven to 200ºC
    Place the bacon rashers on a lined baking sheet and cook until crisp.
    Prick the Sweet Potatoes all over with a fork and microwave for 7 min 30 seconds.
    Cut and crumble the crisp Bacon into small pieces and set aside.
    Once the Sweet Potatoes are cool enough for you to handle scoop out the cooked inside and mash with a fork until smooth. Allow to cool to room temp (You can spread thinly and pop in the fridge to speed this up, or do it in advance)
  • Mix It Up
    Weigh out 250g of your Mashed Sweet Potato into a mixing bowl.
    Add the crumbled Bacon and the rest of the ingredients to the mixing bowl and stir together.
  • Waffle On
    Heat your waffle iron or waffle machine.
    Grease the waffle iron and pour over the batter.
    Cook waffles and repeat. (You can always keep them warm in a low oven if you want to serve at the same time.)
    Serve with whatever you like they can go savoury with more bacon and eggs or sweet with fruit and syrup.

Notes

Leftovers Tip

Now I never have leftover waffles, however if you fond yourself in this fortunate situation, these freeze very well and can be reheated in the oven or the toaster. 
Another idea for these waffles would be to make a hash dice them up and fry off with peppers, onions and sausage meat then top with a fried egg.
