Get the Rice cooking, put the rice and ½ tsp salt into a pan with a lid and cover with boiling water. Bring to a boil and simmer from 15-18 mins according to the packet instructions.
Cut your Chicken into bite sized pieces.
Grate the clove of Garlic.Mix together the Honey, Soy, Sesame Oil & Grated Garlic.Pour over the chicken and let sit for 5 minutes.
During this time you can peel and grate the Carrot.
In a frying pan heat a little flavourless oil.Place the Chicken into the pan and turn occasionally to turn golden.
Next pour the remaining Sauce into the pan and allow to reduce by half and become sticky.
Drain the rice and rinse with more boiling water.Place Rice in bowls with with grated Carrot, Pea Shoots and the Sticky Chicken scatter the Chicken with Sesame Seeds.

LEFTOVERS TIP
Using spring roll wrappers fill with the chicken and carrot. You could always add in rice and beansprouts to have a crisp honey spring roll.Rice Paper Wappers would make a delicious version as well fill with the rice, chicken, pea shoots and carrot for a fantastic mouthful. Great for lunches on the go.
