Puffed French Toast

Ingredients
  

Cinnamon Sugar

  • 150 grams Granulated or Caster Sugar
  • 2 tsp Cinnamon

Batter

  • 1 Egg
  • 1 tsp Vanilla Extract
  • 15 grams Caster Sugar (1 tbsp + 1 tsp)
  • 250 ml Milk I use oat milk
  • 180 grams Plain Flour All Purpose
  • 1 tsp Baking Powder
  • 0.25 tsp Salt

Bread & Oil

  • 5 Thick Slices of White Bread
  • Oil for frying I use vegetable oil

Instructions
 

  • Firstly make the Cinnamon Sugar.
    Mix the Sugar and Cinnamon in a dish and set aside.
  • Prep the Bread.
    Slice the bread into triangles and set aside.
  • Mix up the batter.
    Put the Caster Sugar, Egg, Vanilla Extract in a large bowl and whisk to combine until the Sugar is dissolved.
    Then whisk in the Milk until completely combined.
    In a seperate bowl weigh out the Flour and Baking Powder then add to the wet ingredients and whisk until just smooth.
  • Heat 1.5 inches of flavourless Oil in a frying pan.
    Whilst it is heating set up a large plate with paper towels to drain of excess oil. and bring the cinnamon sugar close.
    Check it's hot (you can test by gently dropping a little batter in and if it puffs and bubbles its ready)
  • Once the oil is ready take your triangles of bread two at a time and dunk in the batter.
    Then once completely covered lay in the hot oil and watch it puff up and turn golden.
    After a couple of minutes turn gently and fry the second side.
  • Once cooked, puffed and golden drain on the paper towel and then toss in the cinnamon sugar whilst still hot.
  • Repeat with the remaining bread, you can keep them warm in a low oven but these take no time at all to cook so they will not be cold if you don't.
    Serve and enjoy.

Notes

Leftovers Tip

This would make the most epic bread pudding tear up the french toast and cover in custard then cook until set. Or you can freeze it and then enjoy Puffed French Toast whenever you want.
