Pea & Avocado Toast Topper

Ingredients
  

  • 150 grams Petit Pois
  • 1 Avocado
  • 1 Lime
  • Pinch Salt & Pepper
  • 2 Eggs
  • Your Favourite Bread

Instructions
 

  • Get the water boiling for your peas and your eggs in two pans
    Add your Petit Pois to the boiling water and heat until cooked about 5 minutes
  • Grate the zest of the lime into a bowl
    Cut your Avocado in half, remove the seed and scoop out the flesh.
    Cut the flesh into small pieces and place into the bowl with the Lime Zest.
    Squeeze the juice of half the lime into the bowl with the Avocado and Zest and give it a light mash with a fork.
  • Now you want to get your Bread toasted and start poaching your eggs.
  • Once the Petit Pois a cooked drain them and return to the pan. I like to remove 2 tbsp of them to scatter on top at the end.
    Using a stick blender give the Petit Pois a blitz, then add the Avocado and continue to blitz until rich, smooth and creamy.
    Season to taste.
  • Get the toast on the plate top with the creamy Pea and Avocado puree then the poached egg and a scatter of Petit Pois, then enjoy!

Notes

Leftovers Tip

The Pea & Avocado Toast Topper makes a fantastic spread for a sandwich, use it with bacon and its great. You could also add it to salads or use it as a dip for crudités.
