Loaded Hummus

Perfect summer food, cool hummus topped with spiced minced lamb, apricots, cripsy chickpeas and salad.

Ingredients
  

For the Chickpeas

  • 1 tin Chickpeas
  • 2 tbsp Olive Oil
  • 0.5 tsp Cumin
  • 1 tsp Paprika
  • 0.25 tsp Flaky Sea Salt

For the Spiced Lamb

  • 500 grams Lamb Mince
  • 1 tbsp Garlic Oil
  • 10 Dried Apricots
  • 1.5 tsp Cinnamon
  • 1 tsp Cumin

To Serve

  • 400 grams Hummus
  • Cherry Tomatoes
  • Cucumber
  • Rocket
  • Pitta Bread

Instructions
 

  • Start with your Chickpeas
    Drain and rinse the Chickpeas and dry.
    Heat 2 tbsp Olive Oil in a frying pan then add in the Chickpeas.
    Fry until crisp and golden between 10-15 minutes.
    Once crisp tip into a bowl and srinkle over the Paprika, Cumin and Seas Salt. Toss to Coat and set aside.
  • Cook the Lamb
    Slice the Apricots into small pieces.
    If using the same frying pan quickly clean and then heat up the Garlic Oil.
    Add the Lamb Mince, Cinnamon & Cumin and brown the mince about 5 minutes.
    Once browned add in the chopped Apricots and stir through.
    Continue cooking for another 7-8 minutes until there are some crisp pieces and some of the Apricots have started to caramelise.
  • Prepare the Dish
    Cut the Cucumber into small dice and halve or quarter the Cherry Tomatoes.
    Tip the Hummus onto a dish and spread.
    Top with the Mince, Chickpeas Tomatoes, Cucumber and Rocket.
    Serve with strips of Pitta to dip and dunk.

Notes

Leftovers Tip

The best thing to do with these leftovers is to put it inside a pitta and have a fantastic lunch the next day. The mince also makes a lovely filling for hand pies.
