Halloumi Curry

A quick, simple, vegetarian curry that is filling and will please the whole family

Ingredients
  

  • 250 grams Halloumi
  • 2 Cloves Garlic
  • 1 inch Fresh Ginger
  • 1 Onion
  • 2 tbsp Tomato Puree
  • 0.5 tsp Ground Turmeric
  • 0.5 tsp Ground Coriander
  • 0.5 tsp Chilli Flakes
  • 0.5 tsp Cinnamon
  • 0.25 tsp Crushed Black Peppercorns
  • 0.25 tsp Chilli Powder
  • 1 tin Chopped Tomatoes
  • 100 ml Water
  • 2 tbsp Mango Chutney
  • Fresh Coriander leaves to serve

Instructions
 

  • Cut your block of Halloumi into cubes roughly 1-2cm.
    Finely dice your Onion and grate your Garlic and Ginger
  • Heat a dry frying pan over a medium heat and tip in the cubes of Halloumi, allow to them to get golden brown, turning occasionally.
  • In a medium saucepan heat 1 tbsp Olive Oil and tip in the chopped Onion and allow to soften for about 3 minutes.
    Next tip in the Garilc and Ginger and cook for 1 minute stirring constantly. Followed by the Tomato Puree cook for a further minute stirring continuously.
  • Now at the Spice - Add the Ground Turmeric, Ground Coriander, Chilli Flakes, Cinnamon, Crushed Black Peppercorns, Chilli Powder and stir and cook for approx. 2 minutes until the spices are fragrant.
  • Now add the Chopped Tomatoes and swill the tin out with the 100ml of water and stir together. Add the Mango Chutney and Golden Halloumi and stir.
    Let the curry come to a bubble and then turn down to a simmer.
    Simmer for 20 minutes.
  • Serve with Scattered with Fresh Coriander leaves, Rice & Nann and enjoy!

Leftovers TipĀ 

This curry is delicious and if you use it as a filling for a halloumi curry pastie. Take it on a picnic. Or top with pastry for a curry pie! So many ways to use this.
