Breaded Sweet Potato Wraps

Ingredients
  

  • 1 Medium Sweet Potato
  • 1 Egg
  • Breadcrumbs to Coat
  • Oil for Frying
  • 250 grams Halloumi
  • Flatbreads, Slaw & Leaves to Serve

Instructions
 

  • Preheat the oven to 120°C 
  • Peel the Sweet Potato and slice into round slices roughly 1cm thick, you want 12 slices. (3 per flatbread)
    In a bowl beat the egg until fully combined in another dish or tray set out the breadcrumbs.
  • Take each slice of sweet potato and dip in the beaten egg and then place in to the breadcrumbs, cover and press down then flip the slice and cover with breadcrumbs and gently press to adhere. Then set aside and repeat with the remaining slices.
  • Heat enough oil to cover the base of your frying pan then place the bread crumbed sweet potato discs into the pan and allow to fry until golden, around 3-4 minutes. This can be done in batches storing crispy ones in the preheated oven.
  • During this time you can slice your Halloumi into eight slices
  • Flip the Sweet Potato and fry the other side until golden 2-3 mins.Once they are golden and crisp on each side place on a baking tray in the oven to keep warm and continue to crisp
  • Drain the used oil from the pan and wipe with kitchen towel to get a dry pan. Then dry fry your Halloumi slices until they become patchy with brown and piping hot.
  • Serve immediately with slaw, salad and flatbreads.

Notes

LEFTOVERS TIP

The leftover sweet potato discs can be used in a katsu curry as mentioned above or they are a fabulous topping for a cottage pie, extra crisp bringing texture to a comfort food classic.
