Baked Halloumi Fajitas

The perfect, low effort, meatless midweek meal

Ingredients
  

  • 2 blocks Halloumi (225-250g per block)
  • 3 Bell Peppers
  • 1 Onion
  • 1.5 tsp Paprika
  • 1 tsp Cumin
  • 0.5 tsp Chilli Powder (If you like heat then add more)
  • 0.5 tsp Dried Oregano
  • 0.5 tsp Ground Coriander
  • 2 tbsp Garlic Oil

Instructions
 

  • Chop!
    Preheat the oven to 180°C Fan
    Slice your Bell Peppers and Onion into thin slices and your Halloumi into thick slices around 1cm wide
    Place into a roasting tin and mix with the Spices and Garlic oil.
  • Cook!
    Place in the centre of the oven for 30 minutes.
    Serve with tortilla wraps, soured cream, lime and fresh coriander.
    Enjoy.

Leftovers Tip

Leftovers of this make the ideal brunch. I make a frittata with these leftovers as a filling! Super delicious!
