Apple Pie Pancakes

Ingredients
  

  • 350 grams Apples
  • 5 tbsp Brown Sugar
  • 1.5 tsp Cinnamon
  • 35 grams Sultanas
  • Pancakes or Crepes

Instructions
 

  • Peel, core and chop the apples into bite sized chunks.
  • In a small saucepan mix together the chopped Apples, Cinnamon, Sugar and Vanilla Extract and let sit for 15 mins.
  • Add the Sultanas and place over a low heat for 5-15 minutes.
  • Fill and roll your pancakes and enjoy!

Notes

LEFTOVERS TIP

Any leftovers you may have can be used in a couple of ways; you can use ramekins to make individual apple crumbles. You could add the filling to a muffin batter to create cinnamon apple muffins. The possibilities are almost endless. Like I said above it also freezes really well.
