Baked Halloumi Fajitas
This might just be the perfect midweek meal. Not only does it all take place in one big roasting tin but it can be scaled up or down so simply. A little light chopping, throw in some spices and mix then bung it in the oven. I love fajitas in all forms but these have to be the simplest ones ever.
Lemon Chicken and Green Beans
If you like lemons you’re going to love this dish. All done in one frying pan and made from start to finish in about half an hour.
