Now this Artichoke Tomato Focaccia is more commonly known in my house as Antipasti Focaccia. We love this warm or at room temperature. Which makes this an ideal bake to take on a picnic. The bread is crisp on the outside and fluffy and bouncy on the inside. While the flavour of the Sun Dried Tomatoes and Artichoke Hearts as well as the Rosemary make this truly feel special.

This might just be the perfect midweek meal. Not only does it all take place in one big roasting tin but it can be scaled up or down so simply. A little light chopping, throw in some spices and mix then bung it in the oven. I love fajitas in all forms but these have to be the simplest ones ever.
