These Sweet Summer Rolls are a surprisingly refreshing snack or a great way to finish a meal. These allow you to fill them with whatever fruit you like best. They also look so pretty and when food looks this good it is impossible to taste bad.

A dish I ate at the Epcot International Flower and Garden Festival, called Frushi, serves as inspiration for these Sweet Summer Rolls. Frushi is a fruit version of sushi. They use melon, pineapple and strawberry encased in rice served with whipped cream and a raspberry sauce. Frushi was a particular favourite of my fiancée and we ended up getting it multiple times. Sweet Summer Rolls

My Sweet Summer Rolls use rice spring roll wrappers you soak these for 10 seconds to make them pliable then fill and roll. If you lay the fruit down first that is what you see through the top. The different combinations are almost endless. The fruit I like using is pineapple, strawberries, blueberries and pomegranate seeds, the textures and colours are great as well as having enough flavour to stand out. 

Rice as a dessert, in Britain, is only really seen in rice pudding. Here the rice is cooked in coconut milk with a sprinkle of sugar. This doesn’t create sweet rice more a base for the fruit to shine and sing against. If you are not a fan of coconut this does not taste of coconut so you are safe. I use sushi rice so it holds together especially well.

In fact you could always make this into a build your own dessert so everyone can use the fruit they wish. You can see how creative people can be. This is something children would love as well as those who are children at heart. If you get the opportunity to play with your food who isn’t going to enjoy that? It is also a great way to get children to eat more fruit.

Sweet Summer Rolls

A glorious snack inspired by Disney World's Frushi
Prep Time 10 minutes
Cook Time 30 minutes
cooling time 40 minutes

Ingredients
  

  • 250 grams Sushi Rice
  • 350 ml Reduced Fat Coconut Milk
  • 1 tbsp Sugar
  • Rice Spring Roll Wrappers
  • Fruit of Choice: Strawberries, Pineapple, Blueberries, Pomegranate Seeds

Instructions
 

  • Rice On – Put the Sushi Rice, Coconut Milk and Sugar into a saucepan with a lid and stir with a fork. 
    Bring to the boil and then turn down to simmer for 20 minutes.
    After take off the heat and let stand covered for 10 minutes. Then allow to cool to room temperature. You could put in a sink of cool water to speed up the process.
  • Prep your fruit – Slice the fruit into small slices. Remember the fruit is what you can see so you want the fruit to be appealing.
  • Rock and Roll – Take kitchen towel or a tea towel and make it damp.
    Place on a surface or board.Take your Spring Roll Wrappers 1 at a time and soak in warm water then place on the wet towel.
    Lay the fruit on and then the rice.
    Take the bottom edge fold over then fold in the sides and roll tight.
    Set aside and then repeat with the remaining rolls.

Notes

Leftovers Tip

You could make a sweet version of anancini fruit in the centre encase in rice then pane and fry. This could be delicious.
