There are days when time is short and my patience is low. However this does not mean my want for delicious food is also reduced. In fact quite the opposite I want good food and I want it quickly with minimal effort. Enter these Sweet Potato and Kale Tacos. Now I know what you’re thinking, I’ve finally lost it. But trust me this is a meal I love not only to make but also to devour.

All you need to do is tear up some Kale and throw into a roasting tin and massage with Sesame Oil and Sesame Seeds then roast for 20 minutes. Nuke a couple of Sweet Potatoes in the microwave then scoop and mash with Chipotle paste. Gentle stirring of a dressing and we are good to go. Of course that is three different processes and does not, on paper, look like minimal effort. I can assure you it is. 

Sweet Potato and Kale Tacos

I do not go for those recipes that say food in 20 minutes but fail to disclose that is 20 minutes of frantic pan juggling and chopping all to often accompanied by copious amounts of sweating and profanities. Instead I want 20 minutes of leisurely traversing my kitchen stirring this, shaking that perhaps with a drink in hand. These Sweet Potato and Kale Tacos allow me to do that. The dressing is the work of 2 minutes, maximum; kale is 5 minutes of hands on time and the sweet potato less than that. Truly relaxed cooking allowing you to emerge from the kitchen laden with a feast without feeling like you have completed a frantic sprint on sports day.

The flavours used in these tacos are ones I know work brilliantly together. In fact I have my Crispy Kale and Sweet Potato Salad that uses the very same dressing. But I find something about food that I can eat with my hands immensely appealing. It might be that it merely appeases my inner child, whatever the reason these tacos were born. The soft smooth sweet potato spiked with chipotle paste provides as spiced blanket for the other components to nestle into. The crisp roasted kale adds texture and the tahini, a nuttiness that echoes the sesame of the kale.

Using the microwave is so often clouded in shame. I, however, proudly proclaim it a vital tool in my arsenal. It makes making sweet potato mash an absolute doddle. Simply prick, wrap, nuke, scoop and mash. It also helps maintain the nutritional value of the sweet potato as boiling them to death and remove so many nutrients. So please do use the microwave without the slightest hint of shame.

Tacos are a superb vehicle for fillings and the possibilities are almost endless. I am always trying new ways of eating them, even for breakfast with bacon and egg filling. Sweet Potato & Kale Tacos

Chipotle Sweet Potato Mash with Crispy Sesame Kale and Tahini Yoghurt Dressing all wrapped up in a soft taco

Ingredients
  

  • 2 Sweet Potatoes 350g once mashed
  • 1 tsp Chipotle Paste
  • 100 grams Chopped Kale
  • 2 tsp Sesame Oil
  • 1 tsp Sesame Seeds
  • 12 Soft Tacos
  • Feta to Serve Optional

Tahini Yoghurt Dressing

  • 150 grams 0% Fat Yoghurt
  • 1 tbsp Tahini
  • 1 tsp Lemon Juice
  • 2-3 tbsp Water

Instructions
 

  • Preheat the oven to 200°C
    Using a fork prick the skin of the Sweet Potatoes and wrap in kitchen towel.
    In a roasting tin put the chopped Kale Sesame Oil & Sesame Seeds and massage the Oil into the Kale for 1 minute.
  • Put the Kale into the hot oven and roast for 20 minutes shaking every 5 minutes.
    During this put the wrapped Sweet Potatoes into the microwave and cook for 10 minutes.
  • Combine the Yoghurt, Tahini & Lemon Juice into a bowl and mix to combine, use the water to loosen it.
  • Once the Sweet Potatoes are cooked scoop out the flesh and mash with a fork, add the Chipotle Paste and mix.
  • Heat the soft Tacos and then serve with all the trimmings.

Notes

Leftovers Tip

The Kale is a great snacking item. These tacos taste fantastic both hot and cold so you can eat them again for lunch the next day. 
Or they are brilliant as Quesadillas to bring even more crispiness.
