This sweet cream cheese dip really is what I call a throw together recipe. I mean the title of recipe is almost far fetched. You take the ingredients mix them together and that’s it! Quite literally a throw together dip.

One thing I have to stipulate and remain strict upon is the cream cheese must be room temperature at the time of the aforementioned throwing. This allows it to combine with the other ingredients completely without lumps of cold cream cheese punctuating your creamy smooth dip.

This can be made as sweet as you want with the addition of more icing sugar, I do sieve this to ensure a uniform smoothness throughout. Also the addition of vanilla extract, or the scraped innards from a pod, can be amped up or taken out if you wish. Whilst I want unadulterated smoothness I think the speckles from the vanilla pod seeds look beautiful and make this extra tempting.

If you are making this in advance then it can be kept in the fridge however it does harden up. So I would remove from the fridge 20 mins before you want to serve it to allow it to be ‘dippable’. Although its so quick to make you can do this whilst the chips are baking.

I decided to go with whipped cream here, as I wanted it to be extra fluffy and yielding to the chips. A quick tip for whipping cream, make sure your whisk, or beaters or whisk attachment as well as the bowl are clean, dry and free of grease. This helps get your cream to maximum height. 

I have on occasion been known to dress this up with some sprinkles, or hundreds and thousands. This is perfect for a party or gathering and positively draws your guests in. Who can resist sprinkles? Although that does rather give the game away if you were hoping to surprise your guests.

This sweet cream cheese dip would work with a number of different accompaniments fresh fruit if you want to pretend to be good. Ginger biscuits are a favourite of mine with this. It becomes almost cheesecake-like. It is brilliant paired with my cinnamon sugar churro chips.

Sweet Cream Cheese Dip

Ingredients
  

  • 250 grams Cream Cheese
  • 150 ml Double Cream
  • 1 tsp Vanilla Extract or the seeds from 1 Vanilla Pod
  • 3-4 tbsp Icing Sugar

Instructions
 

  • Tip the Double Cream into a bowl and whip until thick, so it holds it’s shape but is still soft.
  • In another bowl mix the softened Cream Cheese to a creamy consistency.
  • Add the Whipped Cream and Vanilla to the Cream Cheese and mix to combine.
  • Add the Icing Sugar 1 tbsp at a time to get to your desired sweetness (You may want more or less)
  • Pile into a dish and serve.

Notes

LEFTOVER TIP

Ginger biscuits, chopped strawberries, crushed meringue and this cream cheese dip make a decedent Eton Mess. If you like less sweet desserts then omit the meringue.
