This dish is one of my fail-safe speedy dishes. This goes from fridge to table in the same amount of time it takes to cook your rice. My Sticky Honey Garlic Chicken doesn’t require 20 minutes of frantic work, like so many ‘quick meals’. I find with many of these you end up sweating by the stove trying to juggle 4 pans whilst having to chop at the speed of light, and giving you a headache by the time it comes to enjoy your meal. This, however, is a far more relaxed affair, a mix here, a toss there and the occasional grating. Quick definitely but thankfully not rushed.
This was a meal I made with a shop bought sauce originally. However the sauce disappeared from the shelves to be replaced with a far inferior version. I decided I’d have to make my own. This sauce is a very versatile one. I use this for many different dishes. With chicken it sings, with cocktail sausages it is incredibly moreish. It only has 4 ingredients all of which I have in my cupboard at all times. Honey, Soy, Sesame Oil & Garlic the soy adds more than enough saltiness here so no need to add more.
I mix the sauce ingredients and pour over the chicken as a sort of marinade. Then I make sure I bubble the sauce in the pan to make sure everything is cooked through. The more you cook the stickier your chicken gets. I will say towards the end you do want to keep an eye on the sauce to make sure the honey doesn’t burn. You want this to be sticky and cooked but not glued to the pan.
Serve this chicken with fluffy cooked rice, grated raw carrot and pea shoots. This trio is one of my favourites they play so well together. There is a great mix of textures soft rice, crunchy carrot and crisp leaves. There is also the mix in temperatures, which makes this meal even more interesting. I first had this trinity at Wagamama since that first time they became one of my favourite accompaniments. In fact I serve my Pork Stuffed Aubergine with grated carrot and pea shoots, I omit the rice but I fully support you decision if you choose to have that as well.
This is a dish that can be very easily doubled. I say this serves 2 because at the moment I am most often cooking for two. It uses one chicken breast to serve 2 people. This might seem mean and frugal however I assure you it isn’t. I buy a whole chicken and then portion it up myself, this is a money saving tip as it is much cheaper option. More meat for less money winner, winner chicken dinner – quite literally. I find when portioning the chicken you end up with a bigger breast that if you buy chicken breast fillets. One whole medium chicken does at least three meals for 2, I then freeze the left over carcass and when I have 2 or three in the freezer make my own chicken stock.
This would work well with tofu also. If you wanted to make it vegetarian I would cut and fry the tofu first to get it golden all over. After you have achieved this then pour in the sauce and let it bubble and coat the tofu it should reduce by about half and smell garlicky and sweet. Then serve in bowls scattered with sesame seeds and your watch it disappear in no time at all.
