Now I know what some of you may be thinking isn’t Bruschetta tomato topped bread? Well yes and no.Really Bruschetta is slices of bread, rubbed with garlic and drizzled with olive oil before toasting. Then the toppings are completely up to you be it vegetables, fruit, cured meat or cheese. So here I have a slightly lighten version as I dry toast the slices of sourdough bread this means there is only 1 tbsp of oil and it serves 2 as a meal or 4 as a starter.

Pea Burrata Prosciutto Bruschetta

I love the combination of lemon with peas. Mint adds yet another high note to this sweetness. The prosciutto has a lovely texture and perfect saltiness to go with the sweetness from the peas. Burrata is the creamiest, dreamiest glue to hold it all together. Along with toasted bread – crisp outside slightly chewy inside, you have many texture and taste bases covered. Which is why I am so confident that this may be the perfect bite.

Pea Burrata Prosciutto Bruschetta

Low effort meals are so important as life get so busy. But that doesn’t mean we shouldn’t get good food. Low effort can mean bunging everything in one pot and leaving it for an hour or it can mean a meal you bring together quickly with minimal work. This is that later simply boil some water for pease, toast some bread then toss the peas with dressing and a little chopped mint. It almost couldn’t be simpler. To prevent getting soggy bruschetta let everyone build there own simply load up a dish with the pease, burrata and prosciutto and let everyone top there bruschetta their way. This, whilst undoubtedly getting the best bite ever, saves you hassle no need to build and present at all.

Pea, Burrata, Prosciutto Bruschetta

The most ideal summer meal, minimal effort maximum pleasure

Ingredients
  

  • 200 grams Petit Pois
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 3 tsp Chopped Fresh Mint
  • 1 loaf Sourdough
  • 1 Ball Burrata
  • Prosciutto
  • Fresh Mint to garnish

Instructions
 

  • Boil the water for the petit pois and slice your sourdough loaf.
    Once the water is boiling add the Petit Pois and cook until tender. About 3 minutes.
    Toast your Slices of Sourdough however you wish – toaster, under the grill or a griddle pan.
  • Finely chop some fresh mint (3tsp)
    Mix together the Olive Oil, Lemon Juice and Chopped Mint.
  • Drain the Petit Pois and toss with the dressing.
    Add to a platter with the Burrata and Prosciutto and serve with the toasted Sourdough and enjoy.
    I love spreading Burrata first then Peas and finally Prosciutto but you do you. Enjoy!

Notes

Burrata, Prosciutto and Peas make a fantastic pizza topping but also throw them in a frittata and you will love it!
