On the surface this may indeed look like just yet another avocado toast recipe. I promise you however this is not true. Think of this as peas on toast with an avocado ‘glue’. This is such a fantastic breakfast or lunch or brunch and it’s so quick to make. I think I may eat just about anything on toast but this is a winner especially topped with a poached egg. So get reading to see just what goes into my Pea and Avocado Toast Topper.
When we think of Avocado Toast, instantly the word that springs to mind is ‘millennials’. However this may not be fair as in 1962 the New York Times recommended its readers use avocado as a filling for a toasted sandwich. So it is not as recent as we may believe. It is, of course, a major food trend of the 2010’s. There was a stigma around ordering avocado toast at a café as it was seen as frivolous spending. Many countries have to import avocados and they were at one time very expensive. Some said it was the equivalent of having lobster on toast – which does sound kind of delicious, right?
This recipe is full of goodness and is a favourite in my household. I love it on a brown sourdough thick sliced and if I’m feeling really fancy I’ll toast the bread in my grill pan. I like the texture of the thick toast with the smooth avocado and pea mix with a few extra pops of pea and of course the rich egg. The mix of textures is what makes this a brilliant lunch.
I think the sharpness of citrus is needed to cut through the richness of the avocado. You can use lime or lemon both work brilliantly. The acidity also highlights the sweetness of the peas. As well as helping the taste of this dish, the citrus juice also prevents the avocado from discolouring and turning brown. Instead it keeps a really vivid green colour, which is enhanced by blitzing with peas. This is the most creamy toast topper the oiliness of the avocado makes it super smooth.
Using toast as a base you can build such brilliant lunches or brunches. One of my favourite toppings for toast is Coronation Chicken. Creamy mayo spiced with curry powder and mango chutney with cooked chicken and orange juice soaked sultanas. Again it’s the texture of a creamy topping a crisp toast.

Pea & Avocado Toast Topper
Ingredients
- 150 grams Petit Pois
- 1 Avocado
- 1 Lime
- Pinch Salt & Pepper
- 2 Eggs
- Your Favourite Bread
Instructions
- Get the water boiling for your peas and your eggs in two pansAdd your Petit Pois to the boiling water and heat until cooked about 5 minutes
- Grate the zest of the lime into a bowl Cut your Avocado in half, remove the seed and scoop out the flesh.Cut the flesh into small pieces and place into the bowl with the Lime Zest.Squeeze the juice of half the lime into the bowl with the Avocado and Zest and give it a light mash with a fork.
- Now you want to get your Bread toasted and start poaching your eggs.
- Once the Petit Pois a cooked drain them and return to the pan. I like to remove 2 tbsp of them to scatter on top at the end.Using a stick blender give the Petit Pois a blitz, then add the Avocado and continue to blitz until rich, smooth and creamy.Season to taste.
- Get the toast on the plate top with the creamy Pea and Avocado puree then the poached egg and a scatter of Petit Pois, then enjoy!
