As we hit summer and enjoy high temperatures and long evenings I long for lighter meals. Meals that can be enjoyed with friends and family with flowing conversation. This Loaded Hummus is one of those dishes, it encourages interaction and, if I do say so myself, tastes fantastic. Spiced Lamb with Crispy Chickpeas and Salad on top of cool smooth Hummus.

This dish takes inspiration for a dish that I ate whilst holidaying in Walt Disney World. At the Epcot International Festival of the Arts the Morocco Pavilion I ate a dish that consisted of minced beef with dried cherries and hummus. Loaded Hummus

If you have friends or family come to eat at your house choosing the menu can be difficult. I want something that doesn’t require too much stressful cooking or complicated eating. If I am having people visit to be fed then relaxed it the name of the game. This Loaded Hummus absolutely is an excellent choice. It can be made in one dish and placed in the middle encouraging interaction as you spoon from the dish onto personal plates. Or if you are very comfortable with each other all grab your pitta and scoop away from the dish.

What really works in this dish is the mix of textures and temperatures. The cool smooth hummus provides a brilliant base for the cold, firm cucumber and tomatoes. Whilst the Lamb and apricots are hot and the chickpeas are just warm. This combines to really interesting bites that taste especially good when the weather is warm. Whilst I do love the mix of temperatures if you took this on a picnic and the meat was room temp. it would be a brilliant meal too.

Loaded Hummus

Perfect summer food, cool hummus topped with spiced minced lamb, apricots, cripsy chickpeas and salad.

Ingredients
  

For the Chickpeas

  • 1 tin Chickpeas
  • 2 tbsp Olive Oil
  • 0.5 tsp Cumin
  • 1 tsp Paprika
  • 0.25 tsp Flaky Sea Salt

For the Spiced Lamb

  • 500 grams Lamb Mince
  • 1 tbsp Garlic Oil
  • 10 Dried Apricots
  • 1.5 tsp Cinnamon
  • 1 tsp Cumin

To Serve

  • 400 grams Hummus
  • Cherry Tomatoes
  • Cucumber
  • Rocket
  • Pitta Bread

Instructions
 

  • Start with your Chickpeas
    Drain and rinse the Chickpeas and dry.
    Heat 2 tbsp Olive Oil in a frying pan then add in the Chickpeas.
    Fry until crisp and golden between 10-15 minutes.
    Once crisp tip into a bowl and srinkle over the Paprika, Cumin and Seas Salt. Toss to Coat and set aside.
  • Cook the Lamb
    Slice the Apricots into small pieces.
    If using the same frying pan quickly clean and then heat up the Garlic Oil.
    Add the Lamb Mince, Cinnamon & Cumin and brown the mince about 5 minutes.
    Once browned add in the chopped Apricots and stir through.
    Continue cooking for another 7-8 minutes until there are some crisp pieces and some of the Apricots have started to caramelise.
  • Prepare the Dish
    Cut the Cucumber into small dice and halve or quarter the Cherry Tomatoes.
    Tip the Hummus onto a dish and spread.
    Top with the Mince, Chickpeas Tomatoes, Cucumber and Rocket.
    Serve with strips of Pitta to dip and dunk.

Notes

Leftovers Tip

The best thing to do with these leftovers is to put it inside a pitta and have a fantastic lunch the next day. The mince also makes a lovely filling for hand pies.
