Garlic & Fennel Baked Chips – The savoury side of my speedy snacks. These are my new favourite party dish. I cut wheat tortilla wraps into chips, bake and serve with a dip of some description. These take hardly any time at all and your guests think you went to a lot of effort for them. Of course it is up to you whether you keep up the deception.

I find wholemeal tortilla wraps work well for these however white wraps crisp up more. The depth of the wholemeal flavour does add to the already flavourful chips. However if you want to buy one pack of white tortilla wraps and do half savoury and half sweet then I support that. That gives you a limit of how many you can make. Once you start eating these its difficult to show restraint.

I use whole fennel seeds and rough them up in a pestle and mortar. I am not too vigorous in this, as I like having some whole seeds some fine dust and the rest rubble and shards. This releases the anise flavour of the fennel and gives the chips more personality. Saying this if you want something that looks manufactured then by all means pulverise completely and dust accordingly. 

To get the garlic flavour I have tried multiple ways, from rubbing a cut clove over the wrap – a more subtle flavour, finely minced garlic mixed with vegetable oil, which I find gives the most ‘garlic-y’ flavour. On occasion I cut out the trouble of mincing garlic, not that it’s really a hardship, and just use garlic infused olive oil. This works well with white wraps as the peppery olive oil flavour adds another dimension. 

This is the work of 15 minutes, you can have these in the oven in 5 minutes do any washing up in the 8-10 minutes they take to bake and have them in bowls ready for guests to dip and crunch and compliment you on your homemade party snacks.

Serve these with my Carrot & Orange Hummus for a delicious snack or pleasing party food.

Garlic & Fennel Baked Chips

The perfect chip to dip into cool hummus

Ingredients
  

  • 0.25 tsp Fennel Seeds
  • 1 Clove Garlic
  • Oil Olive, Vegetable, Sunflower
  • 4 Flour Tortilla Wraps
  • Pinch Salt

Instructions
 

  • Preheat the oven to 180° Fan or 200° Conventional.
  • Put the Fennel Seeds into a mortar and crush with the pestle You could easily cross chop these with a chefs knife.
  • Mince the Clove of Garlic and mix with 8 tbsp of Oil of your choice.
  • Take your Tortilla Wraps and place one on a large plate.
    Brush the Oil and Garlic all over the top of the Tortilla Wrap.
    Sprinkle with the Fennel & a pinch of Salt.
  • Flip the Wrap and repeat the Oil, Fennel & Salt application.
  • Using a knife or a pizza wheel cut into your desired shapes.
  • Repeat with the remaining Tortilla Wraps.
  • Place Chips onto a baking tray in a single layer.
    Bake in the oven for 8 – 10 mins until the chips have crisped and the edges. turned golden.
  • Remove and pile onto plates.

Notes

LEFTOVER TIP

These are lovely as a snack or on a picnic. I sometimes use them as croutons for salads for added texture.
Crumbled pork sausage and scrambled eggs turns these into a glorious brunch version of nachos. If you wanted you could add cooked peppers or tomato as well.
