It is Valentine’s Day today and that has me thinking about special occasion dishes. Steak is one of those things that I find gets placed on this list and only made when people really want to make an effort. Well this Brown Sugar Garlic Steak recipe certainly feels celebratory however takes minimal effort to pull together. Simply stir the marinade together, soak the steak, dry and then cook!

Something about the act of sharing food resonates with me and truly brings me joy. I serve this skirt steak on a platter surrounded by skin on potato wedges and a salad of rocket and green beans. The way people can dig in and help themselves is simply satisfying. Being around a table sharing a meal helps me reconnect with loved ones and feel grounded once again.

I had my first taste of skirt steak in Buenos Aires, Argentina and let me tell you it was something so special not just the food but also the wine, the atmosphere and the company but also the FOOD! You know it is special when you still think about it 10 years later! For this reason skirt steak will always hold a place in my heart and I will treat it with all the respect it deserves. This marinade anoints it and makes an already special steak, glorious.

Brown Sugar Garlic Steak

The fact that you marinate the steak then pat it dry may seem counterproductive. I assure you it is not. Patting it dry helps get you a good crust on the outside and not burn the sugars in the marinade. The marinade will have permeated into the fibres of the meat so don’t worry the flavour will be wonderful. I say that 1 skirt steak serves 4 people easily and can be stretched to six if sliced carefully. But if you want to share between 2 there will be no judgement here.

Brown Sugar Garlic Steak

A truly delicious marinade perfect for those special occasions even if that special occasion is a Tuesday.

Ingredients
  

  • 1 Skirt Steak
  • 2 tbsp Dark Brown Sugar
  • 1 tbsp Cider Vinegar
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp Olive Oil
  • 1 tsp Lemon Juice
  • 1.25 tsp Flaky Sea Salt
  • 3-4 Cloves Garlic Roughly Chopped

Instructions
 

  • In a large bowl or roasting tray whisk together the Sugar, Vinegar, Worcestershire Sauce, Olive Oil, Lemon Juice, Salt & Garlic.
  • Add the steak and toss in the marinade until coated. Cover and leave in the fridge for 30 minutes.
    After 30 minutes turn the steak and leave out of the fridge to take the chilll off.
  • Remove the Steak from the marinade and pat dry with paper towel.
  • Cook the steak either in a preheated grill for 6 minutes a side or in a cast iron skillet or large frying pan.
    Cooking time will very depending on the thickness of your steak and what temperature you are aiming for. A thermometer here will give you the best result if you are unsure.
    Serve with a rocket and green bean salad and skin on poato wedges – perfect.

Notes

Leftovers Tip

Almost nothing beats this steak cold in a sandwich with a mustard mayo and a handful of rocket.
