Baked Halloumi Fajitas

This might just be the perfect midweek meal. Not only does it all take place in one big roasting tin but it can be scaled up or down so simply. A little light chopping, throw in some spices and mix then bung it in the oven. I love fajitas in all forms but these have to be the simplest ones ever. My Baked Halloumi Fajitas are a staple in my house and may just become one in yours.

If you haven’t guessed I can’t get enough of halloumi. In fact I have many recipes that use this delicious, salty cheese. It can be grilled, fried or in this case baked. Whilst it bakes in this recipe, it sucks up all the additional flavours you add. Halloumi is one of those wonders of the world, a cheese that doesn’t melt. It does however become soft and squidgy and is a deliciously salty bite of heaven. Here it takes the place of a meat protein. All too often when you make a meal vegetarian you remove the meat and that’s it. So fajitas become the veggies and the toppings. Halloumi makes these fajitas a complete event.

Baked Halloumi Fajitas

The spices mixed with the sweetness of the bell peppers and the onions are really what make this dish special. The mix of spices is my go to fajita spinach spice mix. It works on meat as well as vegetarian options such as halloumi or even tofu if you want. It is Paprika, Cumin, Chilli Powder, Oregano & Ground Coriander plus I use Garlic Oil to cook with and that is my ideal mix of spices. In my household they do not want a big hit of heat and so I keep the Chilli Powder down. If you want more chilli heat absolutely add more.

These Baked Halloumi Fajitas are a staple midweek meal in my house it all takes place in on pan and cooks away in the oven for half an hour. Any recipe that doesn’t need constant babysitting makes it on to my midweek meal list. I can have this prepped and in the oven in 5 minutes it really is that simple. The hardest choice you have to make is what colour peppers to use. I use one of each red, yellow & orange – never green. That is just my prejudice though if you like them then enjoy.

Baked Halloumi Fajitas

The perfect, low effort, meatless midweek meal

Cook Time 30 minutes

Ingredients
  

  • 2 blocks Halloumi (225-250g per block)
  • 3 Bell Peppers
  • 1 Onion
  • 1.5 tsp Paprika
  • 1 tsp Cumin
  • 0.5 tsp Chilli Powder (If you like heat then add more)
  • 0.5 tsp Dried Oregano
  • 0.5 tsp Ground Coriander
  • 2 tbsp Garlic Oil

Instructions
 

  • Chop!
    Preheat the oven to 180°C Fan
    Slice your Bell Peppers and Onion into thin slices and your Halloumi into thick slices around 1cm wide
    Place into a roasting tin and mix with the Spices and Garlic oil.
  • Cook!
    Place in the centre of the oven for 30 minutes.
    Serve with tortilla wraps, soured cream, lime and fresh coriander.
    Enjoy.

Notes

Leftovers Tip

Leftovers of this make the ideal brunch. I make a frittata with these leftovers as a filling! Super delicious!
