Next week Lent will begin with Ash Wednesday. Before that we have Shrove Tuesday, also known as Pancake Day. During this one day, here in Britain, we will use 52 million eggs and 117 million pancakes will be eaten! The fillings or toppings for these millions of pancakes are pretty much endless. Whether you prefer lemon juice and sugar or fresh fruit and chocolate there is no judgement here. Rather, I am here to offer just one filling and so I bring you my Apple Pie Pancakes.

Think of these as apple pie filling that you can wrap in your squidgy crepe. This is a simple recipe that fills your kitchen with the glorious scents of cinnamon and apples. In fact that smell alone is enough to convince you to make this again and again. Use your favourite apples, if you love Bramley apples then use them, whatever you have in the house really will do the trick. Depending on the texture you like really does dictate how long you want to cook these for.  If you like more solid bites apple, then really you may just want to warm them through. 

Apple Pie Pancakes

You simply peel, core and chop the apples, mix with the sugar, cinnamon and vanilla extract in a small pan, then let sit for 15 minutes. Then you want to put the pan on a low heat, add the sultanas and cook fro 5-15 mins depending on your preference. This is the perfect time to get flipping those pancakes. I have not included a pancake or crepe recipe here, however, if you follow the recipe for my Fail-Proof Yorkshire Puddings and use that batter then you will have perfect pancakes. It is simply eggs, flour and milk, you can scale up the recipe easily I suggest 1 egg per person and you should get 3 good-sized pancakes from each egg. Also if you do not use cows milk you can use a milk alternative, I have used both almond and oat milk and they work well.

These surely will not last long once you have made them. I think they taste like a fine French dessert. I top them with a sprinkle of icing sugar. You can eat these at any time of the day. Breakfast, lunch, dinner and dessert are all good options for these glorious tasting pancakes. I want to have some now; once you’ve tasted these you will find any excuse to make them for sure. This recipe is so simple but tastes so good. I mean what is there not to like? Apples, sugar, cinnamon and vanilla, that is a dreamy list right there. 

Of course this could just as easily be an apple pie filling or topped with crumble. If you were to do that then no need for the pan straight into a waiting dish or pie crust and then top and bake. I have a batch of this filling in my freezer waiting for the day when dessert seems the only choice. It does freeze very well and you can use it for so many different things. I always suggest making more than you need so that the next time you crave the sweetness of this fantastic filling.

Apple Pie Pancakes

Ingredients
  

  • 350 grams Apples
  • 5 tbsp Brown Sugar
  • 1.5 tsp Cinnamon
  • 35 grams Sultanas
  • Pancakes or Crepes

Instructions
 

  • Peel, core and chop the apples into bite sized chunks.
  • In a small saucepan mix together the chopped Apples, Cinnamon, Sugar and Vanilla Extract and let sit for 15 mins.
  • Add the Sultanas and place over a low heat for 5-15 minutes.
  • Fill and roll your pancakes and enjoy!

Notes

LEFTOVERS TIP

Any leftovers you may have can be used in a couple of ways; you can use ramekins to make individual apple crumbles. You could add the filling to a muffin batter to create cinnamon apple muffins. The possibilities are almost endless. Like I said above it also freezes really well.
