It has got to that time of year when supermarkets and coffee shops have brought out their festive sandwiches. I love a festive sandwich full of the flavours of a Christmas dinner. I have my own offering that is ever so slightly festive inspired. My Sage and Onion Turkey Burgers, to make them even more festive forward I serve these with a cranberry mayo.
The flavour combination of Sage and Onion always brings me comfort. I associate it with the stuffing which was almost exclusively saved for Christmas whilst I was growing up. The stuffing is always one of my favourite parts so it is a no brainer to try and get my Sage and Onion fix in as many ways as possible. The Onions I chop very finely and then cook until super soft with dried Sage. I love using fresh sage for some dishes this is not one of them, dried is what is needed here.
Turkey burgers can often taste a little bland, not this one I tell you. The onions and sage bring flavour and moisture that makes this a delicious mouthful. You could add an egg to the mixture as well if you wish, I do not think it is needed. Just the Turkey Mince, cooked Onions with Dried Sage and a scattering of Salt, just combined and shaped with as little handling as possible. Then cook on a high heat for a short time to keep the burger from over cooking and turning very dry.
The secret to meatballs or burger being soft and juicy really is not handling them too much. If you overwork the mixture you get tough dry patties. You want you bring everything together but only just. Next shape them quickly. I like to do one or two squeezes into a ball then squash. That’s it, no fiddling -just efficiency. This ensures my burgers are moist and yielding. Another tip is to always serve with a condiment. Here I serve my Sage and Onion Turkey Burgers with a Cranberry Mayo – simply Cranberry Sauce mixed with Mayonnaise. 3 parts Mayonnaise to 1 Part Cranberry Sauce. The extra condiment helps add moisture and another flavour profile to the burger. As well as acting as a glue for solid burger building.

Sage & Onion Turkey Burgers
Ingredients
- 1 Brown Onion
- 1.5 tsp Dried Sage
- 500 grams Lean Turkey Mince 2% fat
- Olive Oil
Cranberry Mayo
- 6 tbsp Mayonnaise
- 2 tbsp Cranberry Sauce (add more if you wish)
Instructions
- Very finely chop the Onion, or if you find it easier grate it. I finely dice with a sharp knife then cross chop it super finely. Add 1tbsp Olive Oil to a frying pan and heat over a medium heat.Add the onion and once it is soft and translucent add in the Dried Sage. Cook stirring until the Onion is super soft and golden brown and the Sage is super fragrant.Allow to cool
- Mix the cooled Onion and Sage with the Turkey Mince. Do not over mix.Divide into four and shape the burgers. I do a gentle squeeze into a ball then press down on the top to flatten.
- Cook on a hot oiled griddle pan or under a high grill for 2-3 minutes then turn and cook for a further 2-3 minutes.You can also cook in a frying pan ad 1 tbsp of oil and cook on a high heat for 2 minutes a side until golden and cooked throughout.Make sure the turkey is fully cooked before consuming.During the burger cooking you can whip up the Cranberry Mayo by mixing the Mayonnaise with the Cranberry Sauce.Serve on toasted burger buns and enjoy.
