I love when a meal takes next to no time to prepare, produces minimal washing up and creates the most delicious dish. Well this Chicken and Chorizo Traybake has it all. This is a favourite in my house not only because it is so simple to make but because it is simply scrumptious. Chuck it all in a tray and roast for 1 hour.

This Chicken and Chorizo Traybake is my secret weapon when I know I have people visiting for a meal. I can prepare everything before hand and throw it in the oven before they arrive. They can then be greeted with the most wonderful aroma that will set their tummies rumbling! Then simply bring the tray to the table and serve and devour. This gives you the time to be with your guests not chained to the stove. Especially handy if your kitchen is not a large one.

Chicken and Chorizo Traybake

I will say that as you fill the tray it will feel overcrowded – or rather it should feel overcrowded. Pack everything in and fill up any gaps you see. As the food cooks it will shrink and the flavours will combine. The oil from the chorizo will slick the bottom and give the most wonderful paprika flavour to everything. For this reason you do not need much oil. I use a little garlic oil over the skin of the chicken and maybe a little drizzle on the potatoes but that is optional.

The seasoning I use for the chicken is paprika and oregano. I just use dried oregano as I always have it in the house. Oregano is a herb that I will use quite a lot, always scattering liberally over pizza. I roast squash and sweet potato with oregano. As well as grilling chicken marinated with garlic and oregano. Oregano is used in so many mediterranean dishes as this is where it originates from.

You can of course use fresh peppers in this dish and I have done. I love the sweetness and eating texture of the roast red peppers from the jar. I always have these in my cupboard in case of emergencies. In fact this traybake came about when I had forgotten to defrost food one day and looked at what was lying around in the fridge and cupboards.

Chicken and Chorizo Traybake

My secret weapon when I have people coming round all with minimal washing up

Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients
  

  • 4 Chicken Legs (Skin On) Or use 8 Thighs (Bone in with Skin)
  • 1 Onion Brown or Red
  • 1 Medium Potato
  • 1 Chorizo Ring (225g)
  • 1 Jar Roast Red Peppers
  • 8 Cloves Garlic Skin on
  • 2 tsp Oregano
  • 1.5 tsp Paprika
  • 1 tbsp Garlic Oil

Instructions
 

  • Prep Time
    Preheat the oven to 180°C Fan or 200ºC Conventional
    If using chicken Legs separted the drumstick from the thigh and place into the roasting tin.
    Now cut the onion into wedges, Quarters work but I prefer to cut in half then each half into three.
    Next cut the potatoes into wedges and the Chorizo into chunks the chorizo should be around 1.5 inches long. If the Roast Red Peppers are particually large cut them long ways. They will shrink you dont want them too small bigger is better,
  • Let's Cook
    Arrange the cut up Onion, Potato, Chorizio and the 8 Cloves of Garlic (keep them in their skins) in the roasting tin with the chicken portions.
    Fill any gaps with the Red Peppers, You can also lay these on top but don't cover the chicken as you want the skin to crisp.
    Sprinkle the Paprika and Oregano over the whole tray paying particular attention to the chicken.
    Drizzle Garlic Oil over the Chicken and whatever else you want.
    Roast in the oven for 1 hour then enjoy!

Notes

Leftovers Tip

Now I know you won’t have any leftovers from this dish but just in case you do then you can always make a Spanish omelette jam packed with chicken, potato, onion chorizo garlic etc.
Or you can add these leftovers to paella rice and create a sublime Spanish Rice dish take my Pretender’s Paella Recipe and use these leftovers in place of the chicken, chorizo and onion just add, rice, peas, stock and saffron and you are on to a very tasty treat.
