When I say waffles the image many people get is a golden set fluffy waffle maybe some syrup or fruit. However if I tell you these waffles have no sugar in them and so provide a base that can be made sweet or savoury then I hope that grabs your attention. These fluffy waffles contain mashed Sweet Potato as well as crumbles of Bacon. They are truly delicious and very simple to make. Perfect for a lazy brunch with a myriad of toppings that people can help themselves to. So I bring you my Sweet Potato and Bacon Waffles.
I was recently asked this question ‘Breakfast for dinner or dinner for breakfast?’ Not only did it spark a conversation but it got me thinking. Now I am very fond of ‘breakfast foods’ and so my answer was very clear breakfast for dinner. The joy of breakfast is that it can be pretty much anything you wish fruity, savoury, sweet, meaty, stodgy. Indeed you can find everything from rice pudding to steak on breakfast menus.
I know there are people who can’t face food in the morning; I am not one of them. For me my body needs breakfast to start the day. How my day starts directly affects how my day carries on. A hectic grab and go breakfast will result in a day that will have an unsettled feeling whereas time to eat breakfast and have a coffee will keep me grounded and calm throughout the day. In my freezer I have a couple of shortcuts to a breakfast that feels special, however some days cereal works just fine.
To make the Sweet Potato and Bacon Waffles there is a little prep you need to do. Nuking the potato in a microwave and then scooping and mashing as well as crisping bacon before crumbling and cutting it up. I crisp my bacon in the oven as I find it crisps up far better than grilling or frying. When you mix the batter there will be lumps. This is ok. You could use a blender to combine the ingredients if you wished to have a smoother batter. However I do think you lose the bacon if you do it this way.
Having sweet potato as a base means I will not add sugar. Similarly bacon adds salt therefore you do not need to add extra. These waffles are the perfect base to create your perfect brunch. If I have friends round for brunch these waffles will be there. A big plate of these in the centre and then a collection of toppings that people can use in any combination they may wish.

Sweet Potato & Bacon Waffles
Ingredients
- 2 Sweet Potatoes 250g Mashed
- 4 Rashers Bacon
- 85 grams Plain Flour
- 1 tsp Baking Powder
- 125 ml Oat Milk (1 half cup measure)
- 3 Eggs
Instructions
- Get PreppedPreheat the oven to 200ºCPlace the bacon rashers on a lined baking sheet and cook until crisp. Prick the Sweet Potatoes all over with a fork and microwave for 7 min 30 seconds. Cut and crumble the crisp Bacon into small pieces and set aside.Once the Sweet Potatoes are cool enough for you to handle scoop out the cooked inside and mash with a fork until smooth. Allow to cool to room temp (You can spread thinly and pop in the fridge to speed this up, or do it in advance)
- Mix It UpWeigh out 250g of your Mashed Sweet Potato into a mixing bowl.Add the crumbled Bacon and the rest of the ingredients to the mixing bowl and stir together.
- Waffle OnHeat your waffle iron or waffle machine.Grease the waffle iron and pour over the batter. Cook waffles and repeat. (You can always keep them warm in a low oven if you want to serve at the same time.)Serve with whatever you like they can go savoury with more bacon and eggs or sweet with fruit and syrup.

Leftovers Tip
Now I never have leftover waffles, however if you fond yourself in this fortunate situation, these freeze very well and can be reheated in the oven or the toaster.Another idea for these waffles would be to make a hash dice them up and fry off with peppers, onions and sausage meat then top with a fried egg.
