There is something about food that you can hold in your hand that is immensely satisfying. Perhaps it brings us back to exploring food as children. Whatever the reason behind it, hand held food is something I am very happy to partake in. In fact it is almost a food group in my opinion. So here is the latest addition to the hand held food category my Breaded Sweet Potato Wraps.
Now there is nothing particularly ground breaking about this flavour combination, I will admit. However the textures and temperatures involved really make this a joy to eat. I fill flat breads with slaw, baby leaves, dry fried halloumi and panko breaded sweet potato. Then apply to face. Whomever you are feeding will love these wraps, I assure you.
I have a number of uses for this crispy fried sweet potato. Serving this with rice and a katsu sauce makes for a delicious vegetarian meal. Or these make a fantastic party snack a big dish of sweet potato with dipping sauces, that I a party I want to be at. You could also use them as a canapé base, a nice bite sized treat.
The inspiration for this recipe came from the forever-glorious Nigella Lawson. In her book ‘Simply Nigella’ there is a recipe for Butternut Squash and Halloumi Burgers. This is a recipe that I have happily eaten many a time. I did however want something crunchy and so why not panko and fry sweet potato. Of course it would be possible with butternut squash. However it is far cheaper to use sweet potato and also quicker to fry therefore the sweet potato wins.
This is family friendly food, it is one of those meals that will not offend most people. You can confidently cook this up and serve to hungry guests to please their taste buds. I like to serve everything separately and let my guest build their perfect bite. A tahini-spiked slaw adds more crunch and depth and is one of my favourite slaws.

Breaded Sweet Potato Wraps
Ingredients
- 1 Medium Sweet Potato
- 1 Egg
- Breadcrumbs to Coat
- Oil for Frying
- 250 grams Halloumi
- Flatbreads, Slaw & Leaves to Serve
Instructions
- Preheat the oven to 120°C
- Peel the Sweet Potato and slice into round slices roughly 1cm thick, you want 12 slices. (3 per flatbread)In a bowl beat the egg until fully combined in another dish or tray set out the breadcrumbs.
- Take each slice of sweet potato and dip in the beaten egg and then place in to the breadcrumbs, cover and press down then flip the slice and cover with breadcrumbs and gently press to adhere. Then set aside and repeat with the remaining slices.
- Heat enough oil to cover the base of your frying pan then place the bread crumbed sweet potato discs into the pan and allow to fry until golden, around 3-4 minutes. This can be done in batches storing crispy ones in the preheated oven.
- During this time you can slice your Halloumi into eight slices
- Flip the Sweet Potato and fry the other side until golden 2-3 mins.Once they are golden and crisp on each side place on a baking tray in the oven to keep warm and continue to crisp
- Drain the used oil from the pan and wipe with kitchen towel to get a dry pan. Then dry fry your Halloumi slices until they become patchy with brown and piping hot.
- Serve immediately with slaw, salad and flatbreads.
